ilaria... my Italian friends say the same thing. And the husband is a chef at 4 Seasons (several locations). I have eaten with them and their home made pizza. It’s outstanding
@Tricia: trust me, your friends are absolutely right! During this quarantine Italians are making a lot of homemade pizza, and the best is still Margherita because it's so simple and so tasty! You should all come in Italy when it will be possible because real Italian pizza at an Italian restaurant in Rome or Firenze is like having a piece of Paradise into your mouth. (I just love my country very much, sorry for my rambling)
We have a wood fire oven outside (and if it's not a good day for the wood fire oven I use a cast iron pizza pan on bricks in a smoking hot gas grill) and my favorite is a really nice thin crust (from scratch) with a red sauce (from scratch - SM tomatoes, fresh oregano, basil, garlic etc.) and topped with mushrooms, fresh mozz and shredded parm. A nice salad topping of fresh greens with a vinaigrette adds to the HEAVEN. The family likes the meats also - pepperoni, sausage, bacon, ALL of it. I love making the dough, the sauce, and of course the limoncello :)
Ilaria, I completely agree! One thing great about Belgium is there are lots of Italians here. On our lane, all of the houses except ours, are owned by one Italian family. Too bad they didn't buy the land before we did, because they could have made it 100%. The nice thing here is that there are lots of Italian restaurants, with the real stone ovens, etc. Such wonderful pizza! Even though we are still under lockdown, we can order take out/delivery from the local places and it's just delicious! *Not ever doing frozen pizza again* Hope everyone is staying safe in self-isolation.
Pepperoni and mushrooms
ReplyDeleteMushrooms, olives, green peppers, onions. Must be a thin crust and must be well done.
ReplyDeletePeppers, mushrooms when I don't want meat on it. Pepperoni if I do. Never want to see any fucking pineapple on any pizza sitting in front of me.
ReplyDeleteHaha. Just baked it last night (funny). Garlic, onion, mushroom, spinach, arugula and feta
ReplyDeleteAnd peppers!
ReplyDeleteEverything spicy meaty (sorry vegetarians !), and way,way too much cheese!
