Off Topic

By the fourth time I have heated up Thanksgiving leftovers I'm ready for some Mexican food.

  4. Turkey enchiladas are pretty good - they don't even taste like turkey. Mix cottage cheese and sour cream, olives and cheese with chopped up turkey cooked with your favorite taco seasoning (I use chile lime mojito seasoning), optional: add a can of drained black beans, roll into tortillas, spread enchilada sauce in the bottom a 13x9 casserole dish, place rolled up tortillas in the dish, then mix remaining enchilada sauce with 1/2 jar salsa verde and pour over enchiladas. Top with shredded pepperjack/monterey jack/cheddar cheese and sliced olives, cover with foil and bake at 425 for 30-40 minutes; remove foil and bake at 475 for 10 minutes to brown. Cool for 15 minutes, serve with salad.*

    I'm sorry, @Reno! Don't you have an In 'n Out in Reno? What I wouldn't give for an In 'n Out protein style, so good.

  5. Bought a smoked turkey from Sonny's BBQ. Ended up with 8 cups of smokey deliciousness, which I used to create a turkey, sausage, and white bean chili. Soooo good.

  8. Hubby and I had a 12 lb turkey for just the two of us. I've single handily taken down approximately 4lbs myself.

  9. OT btw way but a bit of a Thanksgiving miracle ... My dog is doing much better with the meds the vet prescribed for his lymphoma. It was a rough two weeks but this weekend he seems like his old self again. I think it was all the turkey he got this weekend.

  10. @Seven yes Reno has them, but I'm in NC now. I'd also do anything for a double double.
    My only choices real near me is Mickeys or Bojangles. Amf I don't really do Bojangles.

  16. Sherry I will get an egg and cheese biscuit a few times a year at Bo's. Their chicken and season fries are good too, I just don't like to eat a lot of carby-fatty things. I pulled off the bun at Mickey's and had side salad, lol.

  17. @seven, I make my enchiladas very similar,but I use cream cheese instead of cottage. Yum!

    Also, weirdly, I always think of Phil Hartman saying, "And now, Deep Thoughts, by Jack Handey..." when I see these off topic posts.

  18. I won't do leftovers except for cheesy potatoes. I made albondigas on Friday, served with hot flour tortillas and shredded cheese. Yum to the oh.

  20. So, u-verse had a free movie channel weekend and i didn't realize it until yesterday, which happened to be the last day. Thankfully it was in the perfect amount of time to watch the first 9 episodes of Masters of Sex. It's a pretty good show. Pretty sure they did the casting at the Itty Bitty Titty Committee headquarters.

    Mr. Disco made thanksgiving benedicts for us yesterday. He used a round mold (a can with both ends cut off) and placed drissing in the bottom and turkey on top and warmed them i n the oven while he was making brown gravy and poaching eggs. He removed the molds, put gravy over the turkey & dressing, topped that with a touch of cranberry sauce, and the poached egg went on top. It was freaking delicious.

    @Leah & Seachica, yum! I'm doing the homemade "rice a roni risotto" with turkey tonight and I think that should finish it off. Making a triple batch so there's some for our neighbors.

    Another recipe so if you're sensitive to more OT, please skip...

    Homemade Turkey "Rice a Roni Risotto"

    Melt olive oil and butter in a large skillet over medium heat. Add 4-6 cloves sliced or mined garlic and stir until lightly browned. Add 1-2 cups bismati or other preferred rice (TJ's bismati or jasmine works great), stir until toasted and lightly browned. Add a little chicken broth and stir until lightly coated and liquid has been absorbed. Add more broth and continue stirring. Continue adding broth, stirring as rice absorbs broth, until rice is soft. Add about another cup of broth, reduce heat to medium and cover. Cook on medium for about 10 minutes, remove cover and stir, add more broth if needed. Keep adding broth until rice begins to be slightly mushy and all broth is absorbed. Remove from heat, stir in about 1/2-1 cup grated parmesan, cover and let sit. In another, smaller pan, heat olive oil and saute sliced garlic and mushrooms until both are tender; add chopped or shredded cooked turkey (or chicken) and heat through. Remove lid from rice pan and stir chicken mixture into rice; stir thoroughly. Season with garlic salt, parsely, pepper, kosher salt (I like to use TJ's Garlic Salt shaker - sea salt, roasted garlic, onion, parsley - in place of garlic salt and kosher salt), stir thoroughly. Add more parmesan if needed. Serve with peas or salad. You can also add cooked peas into the rice for a single pan meal. *

    If your family is fond of gravy and you have any leftover, you can also heat it up and mix a little in for an interesting texture. (I don't like it but the guys do. Gravy is like honey to guys...)

    1. *should be shredded, not grated, parmesan - the cheese that comes in a bag or is shredded by hand, not the cheese in the green can. (You can use that, but your "risotto" may be a little grainy)
